ArteNOM Selección de 1123 Blanco Histórico Tequila is a unique expression crafted by the Rosales family at the renowned Destilería Cascahuín in El Arenal, Jalisco, Mexico. This tequila showcases the distinctive characteristics of lowland agave and incorporates traditional methods to create a rich and complex profile.

Production Process

  • Agave Source: 100% Blue Weber agave cultivated in the lowlands of El Arenal, Jalisco, known for producing earthy and herbaceous flavors.
  • Cooking: The agave piñas are halved and quartered, with the cogollo (bitter core) removed, then steam-roasted without pressure in brick kiln ovens for approximately 30 hours, including a 6-hour pre-roast to melt off bitters and a 6-hour cool-down period.
  • Extraction: Juice extraction is performed using a gear-spindle roller-mill.
  • Fermentation: The extracted juice undergoes natural fermentation.
  • Distillation: Double-distilled in pot stills to approximately 56% ABV, then reduced to bottling strength with reverse-osmosis demineralized water.
  • Barrel Conditioning: After distillation, the tequila is barrel-conditioned for 21-28 days in brandy casks that previously held Oaxacan mezcal, a practice reminiscent of early 1900s tequila production in the Tequila Valley.

Tasting Notes

  • Appearance: Pale straw color, reminiscent of an autumn meadow.
  • Aroma: Roasted pineapple, warm butter, baking spices, smoked pepper, and cider.
  • Palate: Viscous mouthfeel with flavors of hot cinnamon, black pepper, sweet potato, vanilla, licorice, almond, and hardwood smoke.
  • Finish: Peppery and bright, with a lasting sweetness.
