Overview

Paolo Bea’s "Arboreus" is a unique and captivating expression of Trebbiano Spoletino, an ancient Umbrian varietal. Named after the traditional vine-training method in which vines grow along trees, this skin-contact white wine is produced with a commitment to natural winemaking. The 2015 vintage is deeply complex, unfiltered, and made with extended maceration, delivering remarkable structure and depth.

Vinification and Aging

  • Fermentation: Spontaneous fermentation with native yeasts in stainless steel tanks.
  • Maceration: Extended skin contact for approximately 3 weeks, enhancing texture and aromatic intensity.
  • Aging: Aged on the lees in stainless steel for up to 2 years, followed by additional bottle aging before release.

Tasting Notes

  • Appearance: Deep golden amber, slightly hazy due to minimal intervention winemaking.
  • Aroma: Aromas of dried apricot, honey, orange peel, chamomile, and wild herbs, with hints of spice and earthy minerality.
  • Palate: Rich and textured with bright acidity. Layers of ripe stone fruits, citrus zest, and floral notes unfold with a structured, tannic grip.
  • Finish: Long and lingering, with dried fruit, honeyed complexity, and a distinctive mineral edge.

Food Pairing

Perfectly suited for aged cheeses, roasted poultry, mushroom-based dishes, and umami-rich seafood. It also pairs beautifully with truffle-infused recipes and hearty vegetarian cuisine.

Serving Recommendations

  • Serving Temperature: 12–14°C (54–57°F) to enhance texture and aromatics.
  • Decanting: Recommended for at least 30–45 minutes to allow the wine to fully express its complexity.

Aging Potential

This wine is built for aging, with its structure and acidity allowing it to develop beautifully over 10–15 years.
