I Contadini Capperi di Racale are premium capers harvested in the Salento area of Puglia, traditionally preserved using age-old methods. Small to medium-sized and naturally aromatic, they deliver a distinctive Mediterranean saltiness and briny-herb flavor that reflects the coastal terrain and culinary heritage of southern Italy.
Quality & Sourcing
These capers are hand-picked — one by one — in the countryside between Racale and the Ionian coast. After harvesting, they’re carefully washed, depicciolated, and matured under sea salt for 3–4 months to remove bitterness and preserve the capers naturally. The salt used comes from traditional marine saltworks (e.g. saline of Margherita di Savoia), underlining the product’s link to authentic, artisanal Pugliese tradition. This careful, minimal-processing approach earned them top ranking in a 2020 list of Italy’s best salt-cured capers.

Capperi di Racale are remarkably versatile: they shine in Mediterranean cooking, giving depth and brightness to dishes.
