Overview
Foradori’s "Fontanasanta" Nosiola is a captivating expression of Trentino’s rare and indigenous Nosiola grape. Sourced from the high-altitude Fontanasanta vineyard, this wine reflects Foradori’s commitment to tradition and terroir. The extended skin contact and aging in amphorae impart depth, texture, and an intriguing balance of freshness and complexity.
Vinification and Aging
- Fermentation: Spontaneous fermentation with indigenous yeasts in clay amphorae.
- Maceration: Extended skin contact for several months to develop structure and complexity.
- Aging: Aged in amphorae for about 8 months, allowing the wine to evolve naturally before bottling.
Tasting Notes
- Appearance: Pale golden with slight amber reflections.
- Aroma: Delicate floral notes of white blossoms, chamomile, and almond, intertwined with hints of citrus zest and wet stone.
- Palate: Elegant and textured, with bright acidity and a mineral-driven core. Subtle layers of pear, hazelnut, and herbal undertones add complexity.
- Finish: Long and refined, with lingering notes of citrus peel, almond, and a saline minerality.
Food Pairing
Pairs beautifully with delicate fish dishes, shellfish, light pastas, and alpine cheeses. Its nutty complexity also complements vegetarian dishes with herbal and earthy components.
Serving Recommendations
- Serving Temperature: 10–12°C (50–54°F) for optimal freshness and aromatics.
- Decanting: Beneficial for 30 minutes to enhance texture and aromatic expression.
Aging Potential
Capable of evolving gracefully for 8–12 years, gaining further complexity and depth while retaining its mineral-driven elegance.
