Overview
"IN TERRA" Sangiovese Romagna Bertinoro DOC 2021 from Tenuta La Viola is a soulful, amphora-aged red wine that highlights the expressive nature of Sangiovese grown in the clay-limestone soils of Bertinoro. Crafted using organic farming and minimal intervention, this cuvée represents a pure and textural interpretation of Romagna’s most iconic red grape. “In Terra,” meaning “In Earth,” underscores the use of terracotta amphorae in the vinification and aging process, offering a distinctive take on Sangiovese that emphasizes earth, structure, and fruit purity.
Vinification and Aging
Fermentation: Indigenous yeast fermentation in clay amphorae
Maceration: Prolonged maceration on skins for 20–30 days for gentle extraction
Aging: Aged in amphorae for 8–10 months on the fine lees with minimal intervention
Fining/Filtration: Unfined and unfiltered, with minimal sulfur added at bottling
Tasting Notes
Appearance: Deep ruby red with a slightly hazy appearance due to the unfiltered nature of the wine
Aroma: Aromatic and vibrant, with notes of wild cherry, plum skin, dried roses, and earthy undertones, along with a subtle touch of spice and clay
Palate: Medium-bodied and structured, with a lively acidity and soft tannins. Flavors of red berries, blood orange, and herbal tones are layered over a mineral-driven core
Finish: Clean and persistent, with a savory, slightly saline finish and lingering impressions of tart cherry and Mediterranean herbs
Food Pairing
This Sangiovese pairs beautifully with rustic Italian dishes. Ideal companions include grilled pork sausages, tagliatelle al ragù, roasted eggplant, or aged pecorino. Its freshness and grip also make it a fine match for herb-roasted chicken or lentil-based dishes.
Serving Recommendations
Serving Temperature: 16–18°C (61–64°F)
Decanting: Decanting for 30 minutes is recommended to soften the wine and allow aromas to emerge
Glassware: A Burgundy-style glass or a medium-sized red wine glass helps emphasize aromatics and texture
Aging Potential
While accessible in its youth, "In Terra" Sangiovese has the integrity to evolve over 5–8 years. With time, it will develop additional notes of leather, dried fruit, and forest floor, gaining further complexity without losing vibrancy.
