Vinification and Aging
- Fermentation: Spontaneous fermentation with indigenous yeasts in open-top wooden vats.
- Maceration: Extended maceration of approximately 50 days to enhance structure and complexity.
- Aging: Aged for 36 months in large Slavonian oak casks, followed by bottle aging before release.
Tasting Notes
- Appearance: Deep garnet red with hints of brick at the rim, reflecting its maturation.
- Aroma: An intricate bouquet of dried cherries, blackberries, and plums, layered with notes of leather, tobacco, balsamic, and wild herbs. Delicate hints of spice, truffle, and cedar enhance its aromatic depth.
