Vinification and Aging

  • Fermentation: Spontaneous fermentation with indigenous yeasts in open-top wooden vats.
  • Maceration: Extended maceration of approximately 50 days for enhanced complexity.
  • Aging: 48 months in large Slavonian oak casks, followed by additional bottle aging before release.

Tasting Notes

  • Appearance: Deep ruby red with garnet reflections.
  • Aroma: Complex and layered, featuring ripe dark cherries, blackberries, dried violets, and hints of tobacco, leather, and forest floor. Subtle notes of baking spices and balsamic undertones add further depth.
  • Palate: Full-bodied and structured, with velvety tannins and a core of dark fruit, licorice, and earthy minerality. A striking balance of power and elegance, with vibrant acidity providing freshness.
  • Finish: Exceptionally long and refined, with lingering notes of spice, truffle, and a touch of cedar.

Food Pairing

The 2013 Lupi & Sirene pairs beautifully with rich and savory dishes such as braised short ribs, wild game, aged Pecorino cheese, and truffle-based pasta. It also complements roasted duck and slow-cooked lamb shank.
