Paolo Bea’s "Rosso de Veo" is a powerful and unfiltered expression of pure Sagrantino, sourced from younger vines across the estate’s prime vineyards. Vinification and Aging
- Fermentation: Spontaneous fermentation with native yeasts in stainless steel tanks.
- Maceration: Extended skin contact for over 40 days, allowing maximum extraction of tannins and aromatic compounds.
- Aging: Aged for 2–3 years in large Slavonian oak casks, followed by additional bottle aging before release.
Tasting Notes
- Appearance: Deep ruby with garnet highlights, nearly opaque in the glass.
- Aroma: Intensely aromatic with layers of ripe black cherry, wild blackberry, dried violets, crushed herbs, licorice, and earthy undertones of leather and tobacco.
